What do A5 and MS8 mean?

A5 and MS8 are grades used to classify the quality of Wagyu beef.

A5 is the highest possible rating for Japanese Wagyu. This means that it’s superior in terms of marbling, meat color and brightness, firmness, texture, and overall quality.

MS8 is the highest grade of Australian Wagyu. This score indicates that the Wagyu is a rich, premium, well-marbled cut of beef with a tender texture and buttery mouthfeel.

We are proud to offer both A5 and MS8 certified Wagyu.

How are your meats shipped?

Each item is cut fresh and shipped frozen to ensure the highest quality upon arrival.

Do you offer wholesale services?

Yes. Don Peter’s Carniceria is a wholesale meat supplier for restaurants, taco stands, and any other food retailers. You’ll need to complete our application form and show your seller’s certificate to be verified.

Is your seafood wild-caught or farm-raised?

We offer exclusively wild-caught seafood at Don Peter’s Carniceria, reflecting our commitment to quality over compromise.

What’s the difference between your Australian and Japanese Wagyu?

While both are celebrated for their luxurious marbling and distinctive flavors, each of these Wagyu beefs delivers a unique dining experience.

Japanese Wagyu is prized for its high marbling and melt-in-your-mouth texture. It also has a rich, buttery flavor. Australian Wagyu still has exceptional marbling, but less so than Japanese Wagyu. It’s known for being slightly firmer in texture and having a “beefier” flavor than Japanese Wagyu.

What does A5 Wagyu mean?

A5 is the highest possible grade given to Japanese Wagyu. An “A” grade means that it yields the most usable meat. The number 5 refers to the quality grade. On a scale of 1 to 5 (with 5 being the highest), this Wagyu has exceptional marbling, color, texture, luster, and quality.

Are your meats organic?

No. The meats we carry at Don Peter’s Carniceria are not certified organic. However, we believe that our standards far exceed the organic caliber.

Is your meat kosher?

No. Our meat is not certified kosher.

Can I buy your marinades?

Yes! In addition to our meat selection, you can purchase our specialty marinades and meat seasonings. You won’t find these in your big-chain supermarkets!

Can I come pick up my online order?

Can I freeze my meat?

Yes. At Don Peter’s Carniceria, we recommend cooking or freezing your fresh meat within a few days to maintain quality. Be sure to wrap it well in freezer bags to prevent freezer burn.

How long can meat be kept in the freezer?

Ground meat can last 3 to 4 months in the freezer. Steaks and roasts can be frozen for 6 to 12 months and maintain their quality. Whole chicken can last up to one year, while chicken breasts should be used within 9 months.

Are your employees trained in food safety and handling?
