How to Cook
Prime beef is great for dry-heat cooking, such as roasting and grilling. You’ll need minimal seasoning (coarse salt, black pepper, and maybe a pat of butter or oil) because the beef already has excellent marbling. Flank steaks are the exception. They work exceptionally well with marinades and specialty seasonings. Let your beef sit for 15-20 minutes after seasoning, grill it for about 3 to 4 minutes per side (depending on the thickness), and then let rest for about 10 more minutes. Prime beef is best enjoyed medium-rare, with an internal temperature of 130-135°F.
